Mitre's Edge Wine Estate - Best Boutique Wine Farm Stellenbosch | Cheese & Wine Tasting Stellenbosch — Cabernet Sauvignon and more in Stellenbosch
At the foot of the Simonsberg, where the R44 curves between Stellenbosch and Paarl, a family-owned farm has been quietly producing some of the Cape's most compelling Bordeaux-style reds for over two decades. Mitre's Edge takes its name from the mountain's distinctive peak, and the estate has been shaped by a single family's devotion to this particular piece of earth since 1969.
Martin Hunting bought the property in December 1969 and farmed it for thirty years before handing it to his daughter Lola and her husband Bernard Nicholls in 1999. Bernard, a mechanical engineer by training, threw caution to the wind and reinvented himself as a wine farmer. Together with Lola, who serves as winemaker, the couple replanted the old Cabernet Sauvignon vineyards with carefully selected clones of Cabernet Sauvignon, Cabernet Franc, Malbec, Merlot and Petit Verdot -- the classic Bordeaux varieties -- alongside Shiraz, Chenin Blanc and Viognier.
Lola's passion for Bordeaux wines defines the estate's identity. Production is deliberately small, with the focus on quality over quantity. The wines are crafted in a Cape Georgian-styled manor house cellar, where visitors can taste by appointment in an atmospheric underground room accessed by a spiral staircase. The flagship blend, The Mitre, brings together the best parcels from across the vineyard in a structured, age-worthy red that has won consistent acclaim.
Beyond the cellar, the estate has developed into a genuine farm-stay destination. Four self-catering cottages -- the Pool House, Orchard Suite, Vineyard Studio and Simonsberg Studio -- are set among working vineyards with panoramic views of the Simonsberg. Guests wake to mountain light, swim in the estate pool, fire up the pizza oven, and walk to the cellar door for a private tasting. The estate also offers beach houses at Langebaan and Arniston for guests seeking coastal escapes.
One of Mitre's Edge's most distinctive offerings is the Blend Your Own Wine experience, where visitors create their personal cuvee under the guidance of the winemakers, corking and sealing their own bottle to take home. Wine and cheese pairings round out the tasting programme.
The estate embraces green and ethical winemaking practices throughout the vineyard and cellar. Production remains deliberately limited, with each vintage reflecting the Simonsberg's granitic soils and the cool afternoon breezes that sweep through the Klapmuts gap. The result is a portfolio of Bordeaux-inspired reds with genuine sense of place -- structured, balanced and built to age.
Lola Nicholls is the winemaker at Mitre's Edge, assisted by her husband Bernard. Her passion for Bordeaux wines led to the replanting of the estate's vineyards with Cabernet Sauvignon, Cabernet Franc, Malbec, Merlot and Petit Verdot. Together they produce small quantities of handcrafted, award-winning wines from their Simonsberg property.
